Not to worry: We’ve asked the best vegan chef there is, Rich Landau of Vedge and V Street, for his suggestion. “My pick would be Agave nectar, which is made from the blue agave cactus plant,” says Chef Landau. “It’s really delicious and sweet but with tons of depth and flavor.” You can find it just about everywhere, he adds, even at your local supermarket.
