Since we celebrate Simchat Torah in autumn, the flavors of the fall harvest take center stage at our celebratory meals. This delicious, healthy recipe showcases the sweetness of butternut squash, balanced with fragrant garlic and greens. (You can substitute spinach for the swiss chard, if you prefer.) Topped with pomegranate seeds that shine like jewels, this vibrantly colorful dish will be a star on your holiday table — or at any fall/winter meal.
