Chilly autumn nights call for a warm, filling meal. Skirt steak is not only one of the most flavorful cuts of meat, but because it’s thin and flat, it cooks quickly and evenly; less than five minutes of searing on each side will get you to a perfect, juicy medium-rare. Sizzle up this meal in a single skillet, throw in some veggies and voilá: You’ve created a delicious dinner and one with minimal cleanup. Win-win!
