Zippy za’atar gives zing to this healthy comfort food that’s delicious eaten both hot and cold. What is za’atar, exactly? Popular throughout Middle Eastern cooking, it’s a blend of thyme, oregano and marjoram, mixed with toasted sesame seeds, ground sumac and salt. Its roots are thought to trace back to a wild oregano from biblical times, referenced in the Torah as ezov (hyssop). Find this fragrant spice blend at most grocery stores, or make your own, and bring this fluffy couscous dish to zesty life.
